Awesome Frozen Fruit and Nut Mud Pie

The Story

There I was with a bunch of different kinds of frozen fruit and nuts, and a food processor. What could I do with all that? I thought, well, what about a pie with a nutty crust and a filling of frozen fruit?

Indeed, it tasted good, but making the crust was just too much work. I asked myself, maybe I should just mix everything together?

And that was the answer – just mash it all together, then freeze it. Amazingly, the pie came out tasting just wonderful! Mixing the nuts right into the fruit actually did taste better.

Before we go further, though, I will have to tell you that this recipe requires a lot of strength and a good juicer that can mash nuts. You can make two pies out of the recommended ingredients in about an hour. However, you have to be able to grind the nuts in the juicer and then mix everything together by hand. And, yes, it's very hard work, and when you mix everything together, your hands will get very cold!

AWESOME FROZEN FRUIT AND NUT MUD PIE

In this recipe I am assuming the use of a Green Star Juicer. You will have to adjust some of the insructions if you use a different juicer.

NUTS, SEEDS AND DRIED FRUITS:

1) Mix the following in two separate bowls:

For Pie #1 (First Bowl)For Pie #2 (Second Bowl)
3/4 Cup AlmondsSame
3/4 Cup Other Nuts (Pecans, Hazels, etc.)Same
1/2 Cup Thompson RaisinsSame
1/2 Cup Golden Flaxseeds (ground)Same

Do not use coconut flakes or very oily nuts. Do not use more than 1/2 Cup of flaxseeds.

2) Pour the contents of the first bowl slowly(!) once only through your Juicer, using the closed blank screen to cut off the juice port. Collect the result in the first bowl.

3) Pour the contents of the second bowl slowly(!) once only through your Juicer, using the closed blank screen to cut off the juice port. Collect the result in the second bowl.

4) Make a pocket in the meal in both bowls and add to the nut/seed meal: 2 tsp Vanilla Extract and 1 Tbsp Maple Syrup or other tasty sweet liquid.

5) Knead the contents of the first bowl to mix thoroughly, then put the mass in a 9” pie dish.

6) Knead the contents of the second bowl to mix thoroughly, then put the mass in a 9” pie dish.

Do not clean the Juicer.

FROZEN FRUITS AND COCONUT MILK:

For Pie #1 (First Bowl)For Pie #2 (Second Bowl)
1.5 Cups Frozen BlueberriesSame
1.5 Cups Other Frozen FruitSame
1/4 Cup Coconut MilkSame
5-6 Peeled and Frozen BananasSame

2) Pour the first bowl of fruit through the GS Juicer, using the closed blank screen to cut off the juice port. Collect the result in the first bowl. Put the 5-6 frozen bananas through your Juicer and collect in the first bowl.

3) Put the mass from one of the 9” pie dishes on top of the mashed fruit in the first bowl.

4) Knead the fruit and nut material together until it is evenly mixed (use hands or a masher).

5) Pour the mixed material back into the first 9” pie dish, smooth and round the top, then cover with a suitable wrap and immediately(!) put in the freezer.

6) Repeat Steps 2-5 with the second bowl of frozen fruit and 5-6 more bananas.

PREPARATION FOR EATING:

If the pie is hard-frozen, leave the pie in refrigerator for .5-1 hour or out on a countertop for 15-20 minutes before cutting and serving. After cutting all slices, immediately return pie to freezer.
